The truck came first.

Nobody hands you a reputation in a town this size. You cook, people talk, and eventually they start looking for where you parked.

Tako N’ Madre is a family business that began as a food truck and grew into a full kitchen. The move to a permanent address came after people were already looking for us — not the other way around.

What we cook is Southern California Mexican food, which is its own thing. The quesataco with cheese griddled directly onto the tortilla until the edge turns crisp. Birria cooked down slow, with a cup of consommé to dip. A Cali burrito with the french fries rolled up inside, the way San Diego has done it for decades.

None of that was standard around here. It is now.

Why a travel plaza?

Because a food truck teaches you something: go where people already are. The Corner Pantry Travel Plaza sits a minute off I-29 with parking for anything you arrived in, including a semi.

It means the tacos are as easy to reach for somebody driving from Sioux Falls to Omaha as they are for somebody who lives four blocks away. Pull in, order at the counter, sit down or take it with you.

The building is a gas station. The kitchen isn’t.
